Strawberries and Oranges with Vanilla-Scented Wine |

Late-harvest Riesling is sweeter than other Rieslings. If you can't find it, try an equally sweet dessert wine such as Sauternes, Muscat, or late-harvest Gewürztraminer. Prepare and chill this refreshingly light dessert earlier in the day. If hosting a baby shower, honor the mom-to-be with a nonalcoholic version using white grape juice in place of the wine. Ingredients:
2 cups late-harvest riesling or other dessert wine |
6 (4-inch) strips orange rind |
1 cup fresh orange juice |
2 tablespoons sugar |
1 (6-inch) piece vanilla bean, split lengthwise |
6 cups halved strawberries |
2 1/2 cups orange sections |
mint sprigs (optional) |
Directions:
1. Combine the first 4 ingredients in a medium saucepan. Scrape seeds from vanilla bean; add seeds and bean to wine mixture. Bring to a boil; reduce heat, and simmer 5 minutes. Strain mixture through a sieve over a large bowl; discard solids. Let cool 30 minutes; discard rind. Stir in strawberries and oranges. Cover and chill. Garnish with mint sprigs, if desired. |
