This recipe is actually kind of a tomato omelette. It is quick to make and tasty.
Ingredients:
2 eggs
1 small onion, chopped
1 big tomato, cut in small pieces
2 tablespoons olive oil
salt and pepper
feta cheese, crumbled
parsley
Directions:
1. In a small skillet over medium heat saute the chopped onion in the olive oil.
2. In a bowl whisk the eggs and add them into the skillet along with the chopped tomato and season to taste. Mix well and cook until the juices evaporate.
3. Transfer to a plate and serve topped with crumbled feta cheese and parsley.
