I request this pie from my mom for my birthday every year> If you love raspberries you will love this pie, it is so easy to make, looks gorgous and is to die for. Ingredients:
1 9'' one crust pie shell, blind baked. |
3t cornstarch |
1c sugar |
3-4c fresh raspberries, washed |
1-1/2c heavy cream (i never measure, so i am not too sure) |
1/4c icing sugar |
Directions:
1. Puree 2cups of the raspberries (I use a potato masher) Add sugar and cornstarch. 2. Cook in a double boiler until thick and clear. Cool. 3. Place remaining berries in bottom of baked pie shell (save a few berries for garnishing. 4. Pour cooled filling over berries in shell. Chill. 5. Beat heavy cream with about 1/4c sifted icing sugar until thick. 6. Mound over top cooled pie and garnish with raspberries and mint if you like. |
