Awesome Italian soup that is super fast and super tasty. My husband loves this soup!!! Ingredients:
8 cups chicken stock |
1/2 c orzo pasta (or other small pasta) |
1 pkg (300g) frozen chopped spinach, thawed and drained (i prefer to use fresh spinach-about 4 cups-washed with stems removed) |
1 egg, slightly beaten |
grated parmesan cheese for sprinkling |
Directions:
1. In large stockpot or saucepan, bring stock to a boil on high heat. Stir in orzo. Cook 10 minutes until tender but firm. 2. Stir in spinach. Pour beaten egg into boiling soup, stirring constantly. 3. Serve in bowls immediately, and sprinkle with parmesan cheese to taste. |
