Stove Top Stuffing Meatloaf |

I received this recipe from a Weight Watchers forum and then tweaked it to make it more of my own and to include more veggies. It is always a hit and I frequently get asked for the recipe. Ingredients:
1 lb lean ground beef |
12 ounces reduced-fat sausage, jimmy dean is great |
14 ounces diced tomatoes, any flavor |
6 ounces stove top stuffing mix, any flavor |
1 egg, slightly beaten |
1/4 green bell pepper, diced fine |
1/4 onion, diced fine |
1/4 carrot, shredded |
salt and pepper |
1/4 cup ketchup |
Directions:
1. Gently blend the hamburger and sausage in a mixing bowl. Form a well in the meat and then add the stuffing followed by all ingredients EXCEPT ketchup. Do NOT drain tomatoes. Mix well and form into a meatloaf shape in baking pan. Bake at 350 for approximately 45 minutes or until nearly done and edges are getting crispy. Remove from oven and top with ketchup. Return to oven for additional 10-15 minutes. Allow to rest 5 - 10 minutes, slice and enjoy. 2. This is also great cooked in muffin tins. Not only do you have individual sized meatloaves, with everyone getting crispy edges, they freeze great when the craving for just a little meatloaf hits. |
