My oven was on the fritz so I couldn't roast the veggies, so, a quick saute and it works.... not as good as roasting, but it works Ingredients:
1 vadalia onion, chunk cut |
2 sm eggplants sliced into rounds |
3 sm zucchini sliced into rounds |
cherry tomatoes |
baby portabellas |
1 to 2 tsp french herb rub |
sea salt |
fresh cracked pepper |
1 - 2 tbs olive oil |
shredded swiss cheese |
Directions:
1. Put olive oil in a saute pan, add onions and saute until almost transparent. 2. Add eggplants, zucchini, mushrooms, french herb rub, salt and pepper, saute till there is a little color 3. Add cherry tomatoes, heat until they pop. 4. Dish up and sprinkle with swiss cheese |
