From Everyday Food. They suggest using peaches, nectarines, and plums as the stone fruit options; the fruit should total about 3/4 lb. In place of the cinnamon and lemon zest, you can also use 1 star anise and 2 allspice berries. Ingredients:
2 1/4 cups stone fruit, coarsely chopped |
2 tablespoons honey |
1 pinch coarse salt |
3 tablespoons water |
1 small cinnamon stick |
1 wide strip lemon zest |
Directions:
1. Combine all ingredients in a small saucepan. 2. Cook over medium-high heat, stirring occasionally, until fruit is soft, about 8-12 minutes. 3. Transfer to a pint-sized jar and let cool. 4. Store covered in the refrigerator for up to 2 weeks. |
