This makes a great light dinner served with Greek salad. Ingredients:
1 cup water |
1 tablespoon butter |
1/2 teaspoon salt |
1 cup couscous |
19 ounces lentils, drained and rinsed |
3 green onions, sliced |
1/4 cup fresh parsley, chopped |
Directions:
1. Bring the water to a boil in a small saucepan. 2. Add the butter and salt. 3. Stir in the couscous. 4. Cover and let sit 5 minutes, then fluff with a fork. 5. Stir the remaining ingredients into the hot couscous. |
