This simple mix of vegetables is perfect for serving with fish, chicken, or pork. It is easily mixed with sauce and served over rice, or enjoyed plain. Ingredients:
3 cups sugar snap peas |
2 carrots, sliced |
1 squash, diced |
1/2 tablespoon kosher salt |
2 tablespoons olive oil |
Directions:
1. Precook sugar snap peas in the microwave for 2 minutes. 2. Heat oil in a large skillet over medium heat. 3. Add vegetables and cook until carrots are desired tenderness, 5-10 minutes. 4. Add salt, stir, and serve. |
