Stir Fry Udon Noodles with Bok Choy

Ingredients:
8 ounce(s) udon noodles rinsed and drained
2 tablespoon(s) olive oil
3 clove(s) garlic thinly sliced
1 teaspoon(s) ginger minced
1/8 teaspoon(s) red pepper flakes
1 carrot julienned
8 ounce(s) asian-flavored baked tofu matchsticks
1 head(s) bok choy 1 pieces
2 teaspoon(s) low sodium soy sauce
2 tablespoon(s) lemon juice
1 cup(s) crimini mushrooms
1 cup(s) vegetable broth
2 tablespoon(s) black sesame seeds
Directions:
1. Cook noodles according to package directions. Drain
2. Heat oil, garlic, ginger, and red pepper flakes in skillet or wok 1 minute over medium heat. Add carrot, and stirfry 2 minutes. Add tofu, and stirfry 1 minute. Add bok choy and mushrooms and stir fry 5 minutes or until greens wilt. Fold in Udon Noodles, veg. broth and sesame seeds and cook for 1 minute. Sprinkle with lemon juice
