Stir Fry Pasta with Veggies |

whole wheat thin spaghetti stir fried with fresh veggies Ingredients:
6 5/8 oz whole wheat pasta |
1/2 med red bell pepper |
1/2 med green bell pepper |
1/2 cup chopped vidalia onion |
1 small yellow squash |
1/2 med zucchini |
2 oz portobella mushrooms |
4 tbsp olive oil |
1 tsp minced garlic |
Directions:
1. boil the pasta until thoroughly cooked 2. lightly stir fry the vegetables in olive oil, adding italian seasoning if so desired 3. add the cooked pasta into the pan with the veggies and stir fry for just a few minutes in olive oil (frying for too long will cause pasta to become hard) 4. add adobo seasoning (without pepper) for taste |
