Stir Fry Garlic Spinach With Anchovies |

This is an easy easy yet nutritious and pleasing meal! Check out my step by step illustrated piccie ;) Ingredients:
200g spinach leaves (stems removed) |
2 tbsp chopped garlic |
3 stalks spring onion, cut to 2-inch lengths |
1/2 carrot, sliced |
1/4 cup deep fried anchovies aka ikan billis |
2 tbsp olive oil |
1 tbsp light soy sauce |
1 tsp sesame oil |
1/2 tbsp chinese cooking oil |
Directions:
1. Heat oil in wok and stir fry garlic till golden brown. 2. Add spring onions, carrot, anchovies, light soy sauce, sesame oil & chinese cooking oil. Stir fry for 3 minutes. 3. Add the spinach and stir fry briefly. Spinach cooks quickly so off the fire as soon as the leaves have softened/wilted. 4. Garnish with fried shallots and served. 5.
