Ingredients:
1 tsp olive oil
500 g courgette, sliced and cut in half
150 g onion, chopped into large pieces
110 g bell pepper, sliced into strips
195 g carrot, cut into matchsticks
Directions:
1. Heat the oil, add the onion and carrot, once the onion is translucent, add the pepper and courgette. Veg are ready once the courgette has started to soften.
