Stir-fried Spinach With Garlic |

This dish tastes best with fresh spinach. Just cook spinach beyond the point that it just wilts. The trick is to drain and dry the spinach leaves as well as you can. Ingredients:
500g spinach |
2 tbsp. oil |
3 cloves garlic, sliced |
pinch of salt |
Directions:
1. Cut off the thick stems of the spinach and discard. Clean the and drain the spinach. 2. Heat oil in a wok. Add the garlic and sauté for about 1 minute. 3. Add the spinach. Stir the spinach to cover more of it with the oil and garlic. Cover the wok and cook for 1 minute. 4. Uncover and stir the spinach. Cover the pan and cook for an additional minute. 5. After 2 minutes of covered cooking the spinach should be completely wilted. Remove from heat. Drain any excess moisture. 6. Sprinkle with salt to taste. Serve immediately. |
