Stir Fried Spicy Clams

this recipe goes perfectly with rice
Ingredients:
500gms - clam
1 tbs - dried shrimps soaked and chopped
3 - stalks curry leaves
1 -stalk lemon grass smashed
3 -slices ginger
2-3 - tbs oil
3 -red chillis chopped
little water
(seasoning a)
1tbs oyster sauce
a dash of salt and pepper
1 tbs sugar to taste
2tbs dark soya sauce (for colour)
(thickening - mixed)
1 tsp corn flour
1tbsp water
Directions:
1. Soak clams in lightly salted water, for 15-20mnt.(this is to remove impurities) clean clams under running tap water and drain in a colander.
2. heat oil , saute curry leaves, dried shrimps, lemon grass, ginger and chilli until fragrant
3. add clams and seasoning (A). Stir well to mix. add in a little water
4. cover wok with lid and cook till the clams are opened. thicken with corn flour mixture then dish out to served
