this recipe goes perfectly with rice Ingredients:
500gms - clam |
1 tbs - dried shrimps soaked and chopped |
3 - stalks curry leaves |
1 -stalk lemon grass smashed |
3 -slices ginger |
2-3 - tbs oil |
3 -red chillis chopped |
little water |
(seasoning a) |
1tbs oyster sauce |
a dash of salt and pepper |
1 tbs sugar to taste |
2tbs dark soya sauce (for colour) |
(thickening - mixed) |
1 tsp corn flour |
1tbsp water |
Directions:
1. Soak clams in lightly salted water, for 15-20mnt.(this is to remove impurities) clean clams under running tap water and drain in a colander. 2. heat oil , saute curry leaves, dried shrimps, lemon grass, ginger and chilli until fragrant 3. add clams and seasoning (A). Stir well to mix. add in a little water 4. cover wok with lid and cook till the clams are opened. thicken with corn flour mixture then dish out to served |
