Stir Fried Scallops and Vegetables |

From 365 Easy One Dish Meals. Ingredients:
1 tablespoon soy sauce |
1 tablespoon cornstarch |
1 lb scallops |
4 slices bacon, chopped |
1/2 lb fresh mushrooms, sliced |
1 red bell pepper, cut in strips |
6 ounces snow peas |
2 tablespoons water |
black pepper |
Directions:
1. In a medium bowl, mix together soy sauce and cornstarch until well blended. Add scallops and toss to coat. 2. In a wok or large skillet, cook bacon over medium heat, stirring until crisp and brown. 5-7 minutes. 3. Remove bacon and set aside. Drain all except 1 tablespoon fat from wok. 4. Add scallops and stir-fry until just opaque, about 3 minutes. Remove from pan. 5. Add mushrooms, red bell pepper and snow peas to the wok. Stir fry 2-3 minutes, or until crisp-tender. 6. Return bacon and scallops to wok. Add water and stir-fry until hot. Season with black pepper. |
