This is a great way to use leftover cooked rice. Just prepare recipe as directed, omitting the chicken broth, skipping the rice cooking step and substituting 2 2/3 cups cooked leftover rice for the 1 1/2 cups uncooked rice. This recipe is so good, and flavorlicious!! Ingredients:
1 1/2 cups instant rice, uncooked |
1 1/2 cups chicken broth (25% less sodium) |
2 teaspoons oil, divided |
2 eggs, lightly beaten |
1 lb boneless pork steak, cut into bite-size pieces |
2 cups frozen peas, thawed |
1/2 cup sliced green onion |
1/4 cup asian sesame dressing |
Directions:
1. Combine rice and broth in microwaveable bowl; cover. Microwave on high 5 minutes. Let stand 5 minutes or until liquid is absorbed. 2. Meanwhile, heat 1 teaspoons of the oil in large nonstick skillet on medium-high heat. Add eggs; cook and stir 2 minutes, or until eggs are set but still moist. Remove from skillet; cover to keep warm. 3. Cook meat in remaining 1 teaspoons oil in same skillet 5 minutes or until cooked through, stirring occasionally. Add peas, onions, and dressing; mix well., Srtir in rice and eggs; cook 2 minutes or until heated through. |
