1/2 cup small shrimp (canned or fresh) |
1/2 cup pork roast or 1/2 cup ham, diced |
2 eggs, beaten |
2 tablespoons green peas |
1 tablespoon raisins (optional) |
2 tablespoons chopped green onions |
6 cups cooked rice |
2 tablespoons salt |
8 tablespoons oil |
Directions:
1. Heat 2 Tblsp. oil in pan. Pour in beaten eggs and stir fry quickly until eggs are cooked, and in tiny pieces. Remove from pan. Heat another 3 Tblsp. oil in pan and stir fry shrimp and pork or ham; add green peas and fry 1 minute Remove from pan. Heat another 3 Tblsp. oil and fry the onion and cooked rice, mixing well. Stir until rice is thoroughly heated. Add all other ingredients to the rice; combine well and serve on pretty plates. |
