                                            | Prep Time: 0 Minutes Cook Time: 30 Minutes | Ready In: 30 Minutes Servings: 4 |  |  I came up with this recipe because I love eating rice for breakfast or brunch & I needed something quick to prepare but delicious to eat it with. To make this fair extra special , serve it with some sunny-side-up eggs.  Ingredients: 
                        
                                                | 1 package of beef for stewing, sliced thinly |  | about 3 tablespoons or a little bit more of canola oil, for stir-frying beef |  | marinade |  | 2 tablespoon minced garlic |  | innermost soft part of 2 lemongrass stalks, chopped |  | finely |  | 2 tablespoons finely diced ginger root |  | 1/4 cup soy sauce |  | 1 tablespoon lemon juice |  | 2 teaspoons cider vinegar |  | about a tablespoon of organic granulated sugar |  Directions: 
                        
                            | 1. Mix ALL ingredients for marinade & pour into beef in a bowl. Cover & marinate beef pieces in it for at least 4 hours or overnight. Store in the refrigerator. 2. The next morning, heat the Canola oil. Remove beef pieces from liquid of marinade & stir-fry in oil till preferred doneness ( I stir-fry beef with the chopped Lemongrass & Ginger root pieces). Enjoy with steamed white or brown rice.
