Variations of this recipe use other lettuces, including iceberg & Boston. If the lettuce is not completely DRY, it will steam cook instead of stir-frying Ingredients:
1 tablespoon sherry wine, dry |
1 tablespoon soy sauce |
1/2 teaspoon sugar, granulated |
1/4 teaspoon salt |
1 tablespoon vegetable oil |
4 garlic cloves |
1 lb romaine lettuce |
1 teaspoon sesame oil |
Directions:
1. Lettuce must be thoroughly washed and DRIED 2. Cut cross-wise into 1-inch wide strips 3. Smash and peel garlic 4. In a small bowl combine sherry, soy sauce, sugar and salt. set aside 5. Heat a wok or skillet over high heat. 6. Add the vegetable oil and swirl to coat the bottom of pan 7. Add garlic and stir-fry for a few seconds only 8. then add the lettuce 9. Stir-fry until it is just wilted about 1 minute. 10. Add the sauce and stir-fry until the lettuce is tender but still brightly colored about 1 minute more 11. Remove from heat and toss with sesame oil |
