Stir-Fried Chicken & Vegetables |

A filling and low calorie meal! Ingredients:
6 stalks celery, chopped |
2 green bell peppers, chopped |
2 red bell peppers, chopped |
3 vidalia onions, chopped |
1 seedless cucumber, chopped |
2 pounds boneless skinless chicken breast, chopped |
2 tbs. flour |
3/4 cup soy sauce |
1/2 tsp salt |
Directions:
1. stir fry the chopped chicken until it is cooked through, then set it aside and keep warm 2. stir fry the onions and celery until they are just tender but still crisp. set aside 3. stir fry the peppers, and cucumber for 3 minutes then add the chicken and other vegetables into the pot again, along with 2 TBS flour mixed in 1/2 cup of cold water, the soy sauce, salt, and any other spices you enjoy (suggestions are garlic, ginger, 5 Spice Powder, cayenne) For a little sweetness you can add a tsp or two of Splenda. |
