Stir Fried Chicken and Chilli |

A tasty Thai-style main dish. Ingredients:
3 tablespoons peanut oil |
1 onion, sliced |
2 garlic cloves (sliced or minced) |
1 tablespoon coriander, chopped |
2 teaspoons chili, chopped |
4 chicken breasts, sliced |
2 cups jasmine rice |
4 cups chicken stock |
4 spring onions, sliced |
1 cucumber, sliced |
1 tablespoon fish sauce |
Directions:
1. Heat oil in a large saucepan or wok. 2. Stir fry onion, garlic, coriander and chilli until onion is tender. 3. Add chicken and stir fry until cooked. 4. Transfer to a plate. 5. Stir rice into same pan/ wok. 6. Cook, stirring for 2 minutes. 7. Pour in stock. 8. Bring to the boil, then simmer until rice is cooked. 9. Combine chicken mixture, spring onion, cucumber and fish sauce with rice. 10. Cook gently until heated through. 11. Serve with sweet chili sauce. |
