Stir Fried Cabbage- South Indianstyle |

This is a very simple, no frills dish. Tastes of the tropics. An excellent side dish to any curried dish. You can replace the cabbage with beetroot (shredded) or beans (chopped into small bits) Ingredients:
shredded cabbage – half of one medium sized cabbage |
sliced shallots – 1/2 cup |
grated coconut – 1 cup |
finely chopped garlic – 4 or 5 cloves |
cumin seeds – 1/4 tsp |
slit green chillies – 3 or 4 |
turmeric – a pinch |
salt to taste |
oil – 2 tbsp |
mustard seeds – 1/2 tsp |
curry leaves – a sprig |
Directions:
1. Coarsely grind the coconut, turmeric powder, shallots, cumin, garlic and green chilies. 2. Add a little salt to the cabbage. 3. Heat the oil in a pan and splutter the mustard seeds. Add curry leaves and saute for a minute. 4. Add the shredded cabbage and saute for 2 minutes. 5. Next add the coconut mixture and combine everything together. 6. Cover the pan and cook on a low flame, stirring occasionally for around 8 mins. (Don't add any water) 7. Remove the lid and stir fry for another 4-5 minutes so that the cabbage gets crunchy. |
