Stir-Fried Broccoli With Cashews and Peppers |

A very simple but slightly fancy way to serve broccoli. Ingredients:
1 head broccoli, cut into small florets |
1 red pepper, sliced into thin strips |
2 tablespoons olive oil |
4 garlic cloves, crushed |
1/2 cup cashew nuts, unsalted |
Directions:
1. Heat the oil in a heavy nonstick pan over medium-high heat. 2. Add the cashew nuts and stir over a medium heat for a minute, then add the garlic and broccoli and peppers. 3. Stir-fry 3-4 minutes, or until just tender. 4. Serve immediately. |
