Stir-Fried Beef and Broccoli With Orange-Sesame Sauce |

1 lb flank steak, cut into thin strips |
2 teaspoons soy sauce |
2 tablespoons vegetable oil |
8 ounces bite-sized broccoli florets (3 cups) |
1/2 cup water |
1 bell pepper, cored, seeded, and sliced |
1 (8 ounce) can water chestnuts, drained |
3 garlic cloves, minced |
1 tablespoon grated fresh ginger |
1/2 cup orange juice |
1/4 cup low sodium chicken broth |
1/4 cup soy sauce |
2 teaspoons toasted sesame oil |
2 teaspoons cornstarch |
Directions:
1. Make the sauce: combine the sauce ingredients in a bowl; set aside. 2. Make the stir-fry: Toss the steak with soy sauce; heat 2 teaspoons oil in a 12-inch nonstick skillet over high heat until just smoking. 3. Add in beef; cook, stirring occasionally and breaking up clumps, until lightly browned, about 3 minutes; transfer beef to clean bowl. 4. Add 1 more tablespoon oil to the pan and return to high heat until shimmering; add in broccoli and water to pan; cover, and cook until bright green and slightly tender, about 2 minutes. 5. Remove lid, add in bell pepper and water chestnuts; continue to cook until vegetables are tender, about 3 minutes. 6. Clear center of pan and add remaining 1 teaspoon oil, garlic, and ginger; cook, mashing garlic mixture into pan with back of spatula, until fragrant, about 30 seconds. 7. Stir in cooked beef; whisk Orange-Sesame Sauce to recombine; add to pan, and bring to a simmer. 8. Cook sauce until thickened, 1-2 minutes; serve immediately. |
