Stilton and Bacon Linguine

This quick and easy pasta dinner is packed with delicious flavors, from bacon lardons and Stilton cheese to fresh herbs and leafy spinach.
Ingredients:
2 ounces stilton cheese, roughly chopped
1 tablespoon olive oil
6 ounces unsmoked bacon lardons
1 onion, peeled and finely sliced
5 ounces linguine, cooked as per pack instruction
1 tablespoon fresh parsley
1 tablespoon chives
1 tablespoon basil (chopped)
3 ounces snow peas, sliced lengthways
2 ounces spinach
Directions:
1. Heat oil in a large pan and cook together the bacon lardons and onion for 3-4 mins - until the onion is soft (but not browned) and bacon lardons are cooked through.
2. Add cooked linguine and Stilton cheese, then toss together.
3. Add fresh herbs, snow peas and spinach, stir through and serve.
