Traditional melt-in-your-mouth peanut butter thumbprint cookies with a serious centre! For those who like some rock n’ roll flair with their little bit o’ country cooking. The spice seasoning mentioned is reviewed on my blog. Ingredients:
1 cup peanut butter (smooth or chunky, either is good!) |
1/2 cup margarine or butter (not shortening), softened |
1/4 cup white sugar |
1/2 cup lightly packed dark brown sugar |
1 egg |
2 tablespoons water |
1 tablespoon vanilla extract |
3/4 cup flour |
3/4 cup spelt flour |
3/4 teaspoon baking powder |
1/4 teaspoon salt |
1/2 cup peach spreadable fruit or pure jam |
1/2 tbsp spicedepot hot and spicy seasoning (or 1 tsp cayenne pepper) |
Directions:
1. Preheat oven to 375 F. 2. In a large bowl, cream together the peanut butter, butter, and sugars. 3. Beat in the egg, water, and vanilla. 4. Combine the flour, baking powder, and salt; stir into creamed mixture. 5. Roll tablespoonfuls of dough into balls. 6. Place cookies 2 inches apart onto ungreased cookie sheets. 7. In a small bowl, mix together peach fruit spread and seasoning. 8. Press a dent into each cookie ball with your finger; fill each dent with jam mixture. 9. Bake for 8 minutes in the preheated oven. 10. Cool 3 minutes on sheets before removing to wire rack. |
