This dark, moist date cake has the sauce baked right inside the cake. Ingredients:
1/2 c dark brown sugar |
3/4 c self-rising flour |
1/2 c whole milk |
1 large egg |
1 t vanilla extract |
1/4 c (1/2 stick) unsalted butter, melted |
8 ozs pitted dates, roughly chopped |

1 c dark brown sugar |
2 t unsalted butter, broken into small pieces |
2 c boiling water |
Directions:
1. Cake: 2. In large bowl, combine the 1/2 C Dark Brown Sugar and flour. 3. Pour the milk in a larger measuring cup. 4. Beat in egg, vanilla, and melted butter. 5. Pour this mixture over the sugar and flour, stirring with a wooden spoon or spatula until just combined. 6. Fold in chopped dates. 7. Pour batter in 1 1/2 qt sprayed baking dish. (Don't be concerned that it doesn't look very full - will rise as it bakes.) 8. Sprinkle 1 C Dk, Brown Sugar over the batter and dot with the pieces of butter. 9. Pour the boiling water over top of the entire dish. 10. Bake 45 minutes at 375* or until top of cake is springy and spongy when touched. 11. Remove from oven to cool slightly. 12. Serve warm with vanilla ice cream or whipped cream. 13. ENJOY! |
