A great midweek choice with a really good flavor - you'd never guess it was low fat! Ingredients:
4 boneless skinless chicken breasts |
1 tablespoon olive oil |
1 1/4 cups chicken broth |
4 tablespoons marmalade |
1 teaspoon thyme leaves or 1/2 teaspoon dried thyme |
Directions:
1. Season the chicken with salt and pepper if you like. 2. Fry the chicken in the oil for 8-10 mins turning once until golden on each side. 3. Add the broth, marmalade and thyme. 4. Simmer for 5 mins, remove the chicken and boil the mixture hard to reduce to a syrupy sauce, then pour over the chicken. 5. Serve with rice or mash to mop up the sauce. |
