like lemon drizzle but slightly different Ingredients:
100 g margarine |
100 g caster sugar |
2 egg, duck, whole, fresh |
100 g self-raising flour |
80 g lemons, raw, with peel |
50 g icing sugar |
Directions:
1. Preheat oven to 160c/325F/gas mark 3. 2. Grease & Line a 7in round tin. 3. Beat together margarine and sugar until light and fluffy. 4. Beat in eggs one at a time. 5. Fold in flour and 1/2 rind of 1 lemon. 6. Bake for 45 mins until knife comes out clean from cake. 7. Remove from oven and make several holes in cake, mix together 1/2 lemon juice and 2 tbsp of icing sugar, pour this over cake whilst still hot. 8. Leave cake to cool. 9. Mix Together the rest of the icing, lemon juice and rind. 10. When cake is cold turn it out and pour this mixture over the top. |
