A delicous spicy sticky date pudding served with hot caramel sauce Ingredients:
200g dates |
1 cup water |
1/4 cup golden syrup |
1 teaspoon bi-carb |
1/4 teaspoon ground cloves |
1/2 teaspoon mixed spice |
2 teaspoons finely grated ginger |
60g butter |
2/3 cup caster sugar |
2 eggs |
1 cup self-raising flour |

2/3 cup brown sugar |
2/3 cup thickened cream |
80g butter |
Directions:
1. Place dates, water, ginger and golden syrup in a saucepan and bring to the boil. Reduce heat and cook for 1 minute. Remove from the heat and puree until smooth. Stir through bi-carb. Leave to cool. 2. Place butter and sugar into a large mixing bowl and beat until light and fluffy. Add the egg, one at a time, beating well after each addition. Fold in the flour, spices and date mixture. 3. Pour into a 20cm square cake tin lined with baking paper and bake in a moderate oven (170-190C) for 45 minutes or until a skewer comes out clean. 4. Sauce: Place all ingredients into a small saucepan and bring to the boil. Serve pudding with sauce and cream or ice-cream if desired. |
