This recipe was inspired by the description of the food in a book titled The Airmen and the Headhunters, in which American airmen during WWII were downed in the jungles of Bornea. They survived only by the kindness and generosity of the Dayaks, native Borneans of the inland jungle. This is very sweet, so it makes a good dessert. Ingredients:
3/4 cup white rice |
1/2 cup cream of coconut (found in hispanic food aisle) |
2 bananas, sliced |
2 -3 tablespoons shredded coconut |
Directions:
1. Boil the rice according to the directions on the box or bag. 2. Stir in the cream of coconut, bananas, and shredded coconut. |
