Sticky Bacon & Sweet Potato Jackets |

From an old BBC Food magazine Ingredients:
4 sweet potatoes, about 300 grams each |
8 slices bacon |
2 teaspoons oil |
1 bunch spring onion, chopped |
200 g sweetcorn, drained |
3 tablespoons maple syrup or 3 tablespoons honey |
1 teaspoon dijon mustard |
Directions:
1. Pierce skin of potatoes. 2. Microwave on High for 10 - 12 minutes till soft, turn them over halfway. 3. Halve potatoes lengthways. 4. Scoop 1/3 of flesh out and place in mixing bowl. 5. Place potato skins on baking sheet. 6. Chop bacon into chunky pieces and fry in oil till cooked. 7. Add to bowl and combine with remaining ingredients. 8. Season to taste. 9. Spoon this mixture back into potato skins. 10. Grill till heated through and golden. |
