STEWED TOMATOES IN THE PRESSURE COOKER This recipe came from an estate sale. I obtained it when I purchased the family collection from the Printey Estate in Forney, Texas in 2001. Ingredients:
4 quarts tomatoes |
1 teaspoon salt |
1 tablespoon lemon juice |
Directions:
1. Blanch skin and quarter tomatoes then add salt and lemon juice. 2. Bring to a boil and simmer 10 minutes. 3. Fill jars then pressure cook 15 minutes at 11 pounds pressure. |
