From my collection of handwritten recipes. Ingredients:
4 slices bacon |
2 scallions, shredded |
1 teaspoon fresh ginger, shredded |
1 tablespoon soy sauce |
1 cup water |
3/4 lb string bean, cut in 1-inch lengths |
salt |
Directions:
1. In a wok, cook bacon until crisp and set aside. Stir scallion and ginger in the bacon fat. Add soy sauce and water and bring to a boil. Add beans and mix well. Cover and simmer over low heat until liquid is reduced and beans are tender, about 30 minutes. Serve hot, garnished with crumbled bacon. |
