Stewed Okra and Tomatoes is a classic summertime side dish recipe featuring fresh okra cooked in a mixture of canned tomatoes and flavored with a little bit of sugar, salt and pepper. Ingredients:
1 teaspoon vegetable oil |
1/2 cup chopped onion |
4 cups okra pods, trimmed (about 1 pound) |
1/2 cup water |
1/2 teaspoon sugar |
1/2 teaspoon salt |
1/4 teaspoon black pepper |
1 (14.5-ounce) can no-salt-added diced tomatoes, undrained |
Directions:
1. Heat oil in a medium saucepan over medium heat. Add onion; sauté 2 minutes. Add okra and remaining ingredients; bring to a boil. Cover, reduce heat, and simmer 20 minutes. |
