The words escape me for this side dish. Ingredients:
50 okra pods |
1/4 lb lean ham, chopped |
1 cup beef stock |
1 can stewed tomatoes |
salt and pepper |
1 teaspoon butter |
1 teaspoon flour |
2 teaspoons chopped parsley |
Directions:
1. Wash pods and cut off both ends. 2. Put in a medium saucepan. 3. Season to taste with salt and pepper. 4. Simmer, covered for 40 minutes or so. 5. Blend butter and flour and add to mixture. 6. Cook slowly, stirring constantly, until thickened. 7. Put in heated dish. 8. sprinkle with parsley. |
