Ingredients:
3 1/2 pounds fresh green beans |
3 large onions, chopped |
1/2 cup plus 1 tablespoon olive oil |
2 1/4 cups water |
2 1/2 tablespoons chopped fresh parsley |
2 1/4 teaspoons salt |
1 teaspoon pepper |
Directions:
1. Remove strings from beans. Wash and cut beans into 1 1/2- inch pieces; drain. 2. Sauté onion in oil in a large Dutch oven 5 minutes. Add beans; sauté 8 minutes. 3. Add remaining ingredients; bring mixture to a boil. Reduce heat; cover and simmer 30 minutes or until beans are tender. |
