Stewed Beans the way my mom taught me. We are from Puerto Rico. Ingredients:
1 can black beans |
1 can-full of water |
1/2 maggi chicken bouillion cube |
1/2 packet sazon with achiote |
3 crushed pimento stuffed olives |
1/2 cup tomato sauce |
1 tbs sofrito goya (i use homemade which is a puree of green and red peppers, garlic, onions, and cilantro...then frozen for everyday use in cooked dishes) |
1/2 link chorizo, chopped |
1 inch chunk of salchichon goya (its like a spanish salami), chopped |
Directions:
1. Over medium heat in a medium pot combine can of black beans with water using the same can the beans came in 2. crumble the bouillon cube and add to pot 3. add Sazon, crushed olives, tomato sauce, Sofrito, chorizo and salchichon to the pot and stir 4. bring to a boil then reduce heat and simmer until the liquid thickens to desired consistency. Some people prefer watery and others like them thicker 5. Serve over white rice |
