Courtesy of my friend Irony-Chan. I don't know why she calls it that, either. Ingredients:
2 tablespoons olive oil |
1 green bell pepper, chopped |
1 red onion, chopped |
1 (15 ounce) can condensed cream of chicken soup |
5 cups chicken broth |
1 teaspoon chili powder |
2 cups cubed cooked chicken or 2 cups cubed cooked turkey |
1 (15 ounce) can diced tomatoes |
1 (15 ounce) can cut baby corn |
2 tablespoons flour |
2 tablespoons water |
Directions:
1. In a large saucepan, heat oil over medium heat. Saute bell pepper and onion until soft. 2. Add condensed coup, broth, chili powder and meat. Bring to a boil and simmer 10 minutes. 3. Add tomatoes (with juices) and corn. Stir flour into water until smooth. Add flour slurry to stew. Simmer 30 minutes and serve hot. |
