This recipe originated in Silver City, New Mexico Ingredients:
1 lb hamburger |
6 eggs |
6 tortillas, whole wheat |
28 oz red enchilada sauce |
1 can beans, refried |
3 oz cheddar cheese, shredded |
3 oz onion |
6 oz lettuce |
Directions:
1. warm oven(about 250 degrees) 2. brown and crumble hamburger 3. heat enchilada sauce (optional: diced green chilis) 4. heat refried beans 5. Build Enchiladas: 6. swirl a small amount of sauce as the bottom layer of enchilada on a dinner plate(oven proof) 7. place tortilla on top of sauce 8. layer more sauce, layer refried beans, layer browned hamburger 9. place in warm oven 10. finish rest of enchiladas and place in oven 11. fry eggs sunny-side-up, one or two per person(do not over cook) 12. place eggs on top of enchilada, cover with onions and cheese 13. place under broiler until cheese is melted 14. serve hot with lots of shredded lettuce on top |
