This I found in an old cookbook called Eggtime Anytime. I'm always looking for egg recipes since my girls are laying so well. One to try soon. Ingredients:
4 hard-boiled eggs, sliced |
2 tomatoes, sliced |
220 g tuna, drained |
1 tablespoon butter |
125 g mushrooms, sliced |
3/4 cup light sour cream |
2 eggs, beaten |
2 teaspoons soy sauce |
4 tablespoons parmesan cheese, grated |
pepper, to taste |
Directions:
1. Preheat oven to 190.C. 2. Place sliced eggs, tomato and tuna in layers in a buttered casserole or ovenproof dish. 3. Melt butter & saute mushrooms before adding to the casserole. 4. Mix together all other ingredients except cheese and pour over the casserole, sprinkle with grated cheese. 5. Cook in a moderately hot oven 190.C for 30-40 mins or until mixture is set. Turn up heat for last 5 mins to crisp to cheese top. 6. Serve with rice or spaghetti. |
