Stepmoms Award Winning Spinach And Rice |

Family recipe that won my stepmom $50,000. It can be done with or without the raisins and still tastes great either way - or you can add chicken, pork or shrimp and recipe can be converted to a main one dish meal. Ingredients:
3 tablespoons extra-virgin olive oil |
4 garlic cloves chopped |
1/2 cup golden raisins |
2 pounds spinach, stemmed washed and spun dry |
1 red bell pepper, cored, seeded & cut into slivers |
salt & pepper to taste |
3 cups white rice cooked (1 1/2 cups raw = 3 cups cooked) |
1 cup or 8 oz. crumbled feta cheese |
Directions:
1. 1. Heat oil in large wok or saute pan 2. 2. Add garlic & saute until lightly golden 3. 3. Add raisins & saute for 1 minute 4. 4. Add spinach & Red pepper slivers 5. 5. Sprinkle w/ salt & pepper 6. 6. Toss until spinach is wilted 7. 7. Stir in rice & feta until all ingredients are heated 8. 8. Plate & serve |
