So yummy!!! This will impress your guests and very simple to make. I came up with this for a party once and have been making it ever since! Ingredients:
1 loaf crusty french baguette |
2 tablespoons olive oil |
1 red bell pepper, roasted and chopped |
1 small eggplant, diced |
1 tablespoon sun-dried tomato packed in oil, chopped |
1 garlic clove, minced |
1 teaspoon dried basil |
salt & pepper |
1 cup mozzarella cheese, shredded |
garnish with green olives (optional) |
Directions:
1. Slice bread into one inch slices. 2. Heat olive oil in medium sauce pan over med/high heat. 3. Add all ingredients to pan except cheese saute for about 12 mins. 4. Place each slice of bread on cookie sheet and top with shredded cheese and a tablespoon of sauce pan mixture and garnish with olives 5. Heat oven to 425 degrees. Bake about 12-15 mins. |
