A recipe from our local paper from the Supper Swap Girls at GreenvilleOnline. This looks like it would be a really great way to get the kids to try some veggies. Prep time does not include marinating time. Ingredients:
8 all-beef hot dogs |
1 yellow bell pepper, chopped |
3 zucchini, chopped |
1 (12 ounce) package baby portabella mushrooms |
1 cup unsweetened applesauce |
1 cup barbecue sauce |
skewer |
hot cooked rice |
Directions:
1. Cut up hot dogs, zucchini and bell pepper into bite sized pieces. Skewer the hot dogs, zucchini, bell peppers and mushrooms onto wood skewers, leaving a little room between each. 2. Mix applesauce and BBQ sauce together. Brush onto the kabobs and let sit for at least an hour in the refrigerator. 3. Grill over medium heat or broil them in your oven for 20 minutes, basting once. 4. Serve over rice. |
