Steph's Chicken tortilla soup |

My sister in law made this up in a pinch. We make it every time we have company. Ingredients:
1 lb chicken breast |
mexican seasoning |
2 cans black beans |
2 cans rotel tomatoes (spicy rotel to make it hot) |
3 -4 cups hot water |
2 chicken bouillon |
cheese |
sour cream |
tortilla chips |
Directions:
1. cut and brown chicken breast, season with mexican seasoning. 2. Add beans, rotel, hot water and bouillions in large pot. 3. Let cook about 20 min. 4. to mix flavor. 5. Even better next day. 6. Serve over crushed tortilla chips top with cheese and sour cream. |
