Stephenson's Restaurants Fresh Apple Fritters

If you lived in Kansas City, Mo from the late 60's to mid 90's to probably had gone to Stephenson's Restaurants the original being at 40 Highway and Lee's Summit Road. They have long since been closed, however I was able to purchase a recipe book called Stephenson's Restaurants Receipts Old Family Secret Recipes that have some of the original restaurants popular dishes. The Apple Fritters were a signature dish,. This is a wonderful recipe and I am glad I was able to share it again with those who remember it.
Ingredients:
1 cup milk
1 egg (beaten)
4 tablespoons margarine
1/2 cup sugar
1/2 teaspoon salt
1 orange, juice and zest of
1 cup apple (chopped fine)
3 cups flour
2 teaspoons baking powder
1 teaspoon vanilla
4 cups vegetable oil, to fry fritters enough they float in a pot
Directions:
1. Beat egg, In a mixing bowl combine the milk, egg, and melted margarine. Add the orange juice, rind, chopped apples (skins can be left on ) and vanilla. Sift together the flour, salt, baking powder and stir into milk mixture with a spoon until blended. Do not over mix. Preheat oil in a skillet to 350 degrees. drop off end of tablespoon into hot oil. Fry to a golden brown. Turn so they brown evenly. Allow to cool. Roll in powdered sugar. Serve with salads or eat as dessert.
