These are Steel Cut Oat muffins. They are high in protein and have flax seeds for Omega 3's. They are sweet without any added sugar. Ingredients:
2 cups steel cut oats |
12 egg whites |
2 granny smith apples, chopped |
1 tablespoon cinnamon |
1/2 teaspoon vanilla extract |
3 tablespoons splenda sugar blend for baking |
1 teaspoon lemon zest |
1 teaspoon orange zest |
1/2 cup raisins |
1/4 cup ground flax seeds |
Directions:
1. Combine all ingredients, mix with electric mixer for 2 minutes. Pour into nonstick muffin pans. Bake at 375 for 15-20 minutes. For bread pan, cook at 375 for 60 minutes or until toothpick comes out clean. Store in ziplock bags or Tupperware in refrigerator. |
