Steel Cut Oatmeal prepared overnight in crockpot. Freeze left-overs in single serving containers. Ingredients:
2 cups oatmeal, steel cut (not quaker old fashioned) |
5 cups water |
1 1/2 cups non-fat milk |
1/2 cup brown sugar |
1 tbsp. cinnamon |
1 tsp vanilla (optional) |
1 tsp. kosher salt (optional) |
Directions:
1. Spray crockpot stoneware with cooking spray. 2. Place ingredients in the crockpot. Cover and cook on low 8-10 hours. 3. Optional: 4. 2 choped peeled apples and/or 1 cup raisins or dried cranberries can be added at beginning of cooking 5. just before serving, bananas, blueberries, and/or pecans may be stirred in. 6. I put left overs into single serving freezer containers. When in a hurry, grab a container out of the freezer, microwave about 3 minuntes on high (stirring half-way through), add frozen blueberries and microwave addtl 30 seconds. Much more economical than buying the pre-packaged frozen, single serving portions at TJ's. |
