From my collection of handwritten recipes. Ingredients:
2 lbs baby back ribs (cut in thirds lengthwise) |
2 tablespoons soy sauce |
1 tablespoon dry sherry |
2 teaspoons minced scallions |
1/2 teaspoon minced ginger |
1 tablespoon fermented black beans, rinsed and mashed |
1 tablespoon vegetable oil |
1/2 cup cornstarch |
1/2 teaspoon five-spice powder |
1/4 teaspoon salt |
Directions:
1. Separate ribs into single pieces. In a large bowl, mix together soy sauce, sherry, scallion, ginger, and black beans. Add ribs and toss to coat well. Cover and refrigerate 30 minutes. Coat a 9 heatproof plate with oil. In a shalow bowl mix cornstarch, five spice powder, and salt. Toss ribs in seasoned cornstarch to coat and place on oiled plate. Place in a bamboo steamer. Pour any remaining marinade over ribs. Cover and steam 45 minutes, until ribs are tender. |
